Here is what you need

  • Colombia 40ml
  • 2 tbsp Vimto
  • 250ml water
  • pinch of salt
  • 100ml cream, chilled and whipped to soft peaks
  • Cappuccino cup

Let's make it!

  • Mix the Vimto, water and salt and pour in a metal tray and place in the freezer until frozen (about 8 hours)
  • Brew the coffee (espresso) and let it stand for a few minutes to cool
  • Use a fork and scrape large crystals of the frozen Vimto granita and spoon the granita into a cup
  • Pour the cool coffee on top
  • Spoon the whipped cream on top and serve
